Mexican Braised Pork Loin

3  pound  pork loin  
2    sweet potatoes peeled, large, diced  
1  cup  tomato salsa  
0.5  cup  Stock  
0.5  cup  tomatillos, diced  
0.25  cup  cilantro leaves  
1  teaspoon  salt  
1  teaspoon  pepper   
0.5  teaspoon  cumin  


Cilantro, use half for cooking and the other half for garnish.


  1. Place the inner pot into the Pressure Cooker. Press the Chicken/Meat button. Press Time adjustment button to 20 min.
  2. Season the pork loin with salt, pepper, cumin
  3. Add the oil; sear the pork loin on all sides
  4. Add in the salsa, diced tomatillos, cilantro, and stock. Place the sweet potatoes on the side
  5. Place the lid on the Pressure Cooker and Lock. Switch the Pressure Release Valve to Closed.
  6. Once the timer reaches 0, the Cooker will automatically switch to KEEP WARM. Press the CANCEL button. Switch the Pressure Release Valve to Open. When the steam is released completely, remove the lid.
  7. Remove pork loin from the inner pot. Let it rest for 8-10 min then slice
  8. Serve with the sweet potatoes and the sauce from salsa and natural au jus.
