  • 5 lbs. of chitterlings

  1. Start by cleaning the chitterlings thoroughly. Remove any excess fat, grime, or debris. Rinse them several times under cold water until the water runs clear. This process can take up to an hour, so be patient and take your time.
  2. Cut the chitterlings into 2-3 inch pieces and place them in the pressure cooker.
  3. Add the chopped onion, minced garlic, salt, black pepper, and bay leaves. Stir everything together until the chitterlings are well coated with the seasonings.
  4. Add enough water to the pressure cooker to cover the chitterlings completely. Make sure you don’t fill it up more than 2/3 of the way, as the pressure cooker needs room to build up pressure.
  5. Close the lid of the pressure cooker and turn the heat up to high. Once the pressure cooker has reached full pressure, reduce the heat to medium-low and cook for 45 minutes.
  6. After 45 minutes, remove the pressure cooker from the heat and let the pressure release naturally. This can take up to 20 minutes.
  7. Once the pressure has been released, carefully remove the lid and check the chitterlings for tenderness. If they’re not quite done, put the lid back on and cook for another 10-15 minutes.
